Ole Europaea, David Blair (Scottish, 1852-1925). From Robert Bentley and Henry Trimen, Medicine Plants. (London, 1880), vol. 3, no 172. A foundation plant of Mediterranean horticulture, the olive is believed to have been domesticated in Syria* and to have moved to Crete, where it was grown before 2,000 BC, and thence to mainland Greece. From Greece, cultivation of the olive spread to Italy, and subsequently to all parts of the Roman Empire where it could flourish.
Characterized by a gnarled trunk and distinctive gray-green leaves, the olive is an evergreen shrub or tree typically not exceeding a height of fifteen meters (49ft). Deep-rooted and slow to mature, it produces fruit only after some five or even fifteen years, depending on the cultivar. The olive is also extraordinarily long-lived, specimens having reached ages ranging from several hundreds to more than a thousand years.
Although the olive's most valuable product was the oil yielded by its fruit, virtually every part of this plant was used in antiquity. Olive wood found applications in construction and carving, where it was selected in the fabrication of items such as doorjambs and statuary. Olive leaves, discovered to possess astringent as well as detergent properties, were employed to treat a variety of medical conditions, including ulcers, headaches, and afflictions of the eyes. The fruit of the olive was cured in brine and consumed, or, of course, pressed in the production of oil. A versalite product, olive oil was burned as fuel in oil lamps, utilized as a moisturizer for the skin, and employed as a cleanser, first applied to the body and then scraped off. The Greek travel writer Pausanias recounts that oilive oil was a preservative for ivory; the enormous gold-and-ivory statue of Zeus at Olympia, he observes, stood behind a shallow oil-filled basin. Oil of the olive found further application as an igredient in cosmetics as well as in slaves, to combat afflictions that included itching blisters, chills, and numbness. It was also the base for perfumes, to be applied to the skin, hair, and clothing; used to scent rooms and outdoor spaces; and poured and burt as an offering to the gods and to the dead. On th culinary front olive oil served as a topping fro bread, as a marinade or dressing, and as a medium for cooking all manner of foods. Even the pulp that remained after pressing was valued as a pesticide and treatment for ailing trees.
In addition to such practical applications, the olive carried deep sacral resonances that extended to a wide range of social rituals, all rooted in myth. Those bearing a sprig of olive, such as supplicants and heralds, were marked as special, favored and protected by Zeus. The same was true of those who had heroically served the state as well s athletes victorious at the Olympic games.
The Greek poet Pindar explained how olive came to be sacred to Zeus. When Heracles (known to the Romans as Hercules) found the gardens of Zeus's sanctuary at Olympia bare of trees -and wished to commemorate the games he had instituted there in his divine father's honor -he brought the olive from the land of the Hyperboreans, a mythical people who, according to Pindar, inhabited regions by the Danube.
The olive tree was, however, sacred not only to Zeus (Jupiter or Jove) but also to his daughter Athena (Minerva). Athena was patron goddess of Athens, a distinction she won in a contest with Poseidon (Neptune), lord of the sea. Ovid embeds the particulars of this contest in his tale of the gifted but fatally arrogant weaver Arachne, who foolishly challenges Minerva. Here the olive, placed strategically both at the center and at the edges of the tapestry Minerva weaves, sends the unequivocal message that universal peace, justice, and order are entirely owing to the dispensation of moral gods. Minerva's message, however, is soon discredited by Arachne, whose tapestry depicts a host of mortals victimized by wantonly lustful gods. In keeping with her tapestry's theme, the girl opts for a border of brightly colored flowers and twining ivy-emblems of Bacchus, the most changeable of gods, and signifiers of the world's unpredictability.
Attica was particularly well suited to olive production, for the olive thrives especially in coastal areas with hot, dry summer. The olive became an official icon of the city, appearing as such on its coinage, together with the owl, Athena's sacred bird and symbol of that goddess's wisdom. Olive oil, liquid gold stored in specially produced jars, amphorae, was given as a prize to athletes victorious in the prestigious Panathenaic Games held in Athena's honor. So valuable was Athena's tree that it was concidered a sacrilege -punishable by banishmet and consfication of property - to desecrate the sacred olive grove that was the source of this prize oil.

The Spanish first brought olives to the Americas. The trees thrived in the warm, dry climate of California. Today California prosuces almost all the olives grown in the United States. Spain and Italy, the leading olive-producing countries, provide about half of the world's supply. Greece is also a major olive producer.

*The olive was first domesticated in the Eastern Mediterranean between 8,000 and 6,000 years ago, according to new research.
The findings, published today (Feb. 5) in the journal Proceedings of the Royal Society B, are based on the genetic analysis of nearly 1,900 samples from around the Mediterranean Sea. The study reveals that domesticated olives, which are larger and juicier than wild varieties, were probably first cultivated from wild olive trees at the frontier between Turkey and Syria.
"We can say there were probably several steps, and it probably starts in the Levant," or the area that today includes Israel, Palestine, Jordan, Lebanon and Syria, said study co-author Gillaume Besnard, an archaeobotanist at the National Center for Scientific Research in France. "People selected new cultivars everywhere, but that was a secondary diversification later."
